Baked Filled Pastries: Börek

Börek is a traditional food which is originated in East Europe and came to Turkey with the Ottomans. It is made by rolling out very thin pastry dough called yufka.

There are numerous varieties of Börek. Generally it is made with cheese and parsley or spinach, potato, leek, eggplant, green lentils, There is also su böreğı (water börek) which is prepared with plain yufka boiled in salty water and baked in the oven.

In all different shapes and size, also with vegan alternatives, this versatile food is consument widely in Turkey, and throughout Eastern Europe. It can serve as a satisfying breakfast or snack.
